काचरा गुवार फली    काचरा और गुवार फली का आचार बहुत ही स्वादिस्ट होता है।  सबसे पहले खेत में से पके हुये काचरे इक्कठे कर लेने चाहिए। उनको धोकर छाँव में सुखा देना चाहिए, दो दिन बाद इनको 4-5 टुकड़ो में काटकर (लम्बाई के आकार में) साफ कपड़े पर हल्का नमक डालकर सुखाना चाहिए। जब नमक एक दो दिन में इन के अंदर सोख लिया जाये तो हल्के हल्के बीज अलग कर दिजीए। अब मसाला तैयार करके कडाही में तैल गर्म होने के लिए चढा देना चाहिए। जब तैल गर्म हो जाये तो मसाले का छौंक लगाा दिजिए। फिर इसे आधा घन्टे तक गर्म किजिए। अब कटे हुये काचरे के टुकड़ो को इस में मिला लिजिए। 5-7 मिनट के बीद किसी साफ बर्तन में निकाल लिजिये। जब ये ठंडा हो जाये तो इसमें थोड़ा तैल और गर्म करके उपर तक ढक दिजिए। अब इसे किसी ठंडे छायादार स्थान में रख दें। 10-15 दिन के बाद जब काचरे के टुकड़े मुलायम हो जाये तो खाने में प्रयोग करें। ध्यान रहे जब बर्तन में से तैयार आचार को निकाले तो साफ हाथो से निकालें, आटे से सने हाथों का प्रयोग न करें । खाने के लिए निकालने के बाद सुनिश्चित करें कि तैल उपर तक हो।  इस प्रकार आप...
